Middle Eastern Spiced Beef Kofta with Garlic Yogurt

Grate the onion using a box grater and squeeze out the excess liquid using a paper towel.

Finely chop the parsley and mince two garlic cloves.

In a large bowl, combine the ground beef, grated onion, chopped parsley, cumin, coriander, paprika, salt, and pepper, mixing by hand until the mixture becomes slightly tacky.

Shape the meat into eight oblong logs, lightly coating your hands with olive oil to prevent sticking.

Whisk the Greek yogurt with the remaining minced garlic clove, lemon juice, and a pinch of salt, then set aside in the refrigerator.

Heat a large non-stick skillet over medium-high heat and sear the kofta for about 3 minutes per side until deeply browned and cooked through.

Rest the meat for 3 minutes before serving alongside the chilled garlic yogurt sauce.
