Ginger-Scallion Ground Turkey Stir-Fry

Finely mince the ginger and garlic, then slice the scallions, keeping the white and green parts separate.

Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Add the ground turkey to the pan and cook for 6 to 8 minutes, using a wooden spoon to break it into small crumbles until no pink remains.

Stir in the minced ginger, garlic, and the white parts of the scallions, sautéing for 1 minute until fragrant.

Whisk the soy sauce, oyster sauce, sugar, and sesame oil in a small bowl, then pour the mixture over the turkey.

Toss the turkey constantly for 2 to 3 minutes until the sauce reduces and coats the meat evenly.

Remove from heat and garnish with the reserved green scallion tops before serving immediately.
