Chef's note
Whipping the cottage cheese transforms its curd texture into a luxurious, mousse-like base perfect for sweet or savory toppings.
Method
5 steps · tap one to tick it off
Tips
Pour off any liquid in the tub. Extra whey makes the whip runny. Tip it off before blending for a thick, spoonable bowl.
Scrape the blender down halfway. Cottage cheese clings to the sides, and stray curds leave the bowl lumpy. Stop, scrape, and blend again.
Pull the walnuts the moment they smell toasty. Walnut skins turn bitter soon after browning. Tip them onto a plate rather than leaving them in the hot skillet.
Swaps
No walnut halves? Pecans or sliced almonds, toasted the same 2 minutes.
No honey? Maple syrup, the same amount. Thinner and less floral.
Storage
Fridge: 3 to 4 days in a sealed container. Keep the walnuts in a separate jar and add the honey when serving.
Freezer: Not worth freezing: whipped cottage cheese turns grainy and watery as it thaws.
Serving: Serve cold. Stir it once before adding the toppings.
Fridge and reheating follow Illinois Extension; freezer times are for quality and follow the University of Nebraska-Lincoln, as on what freezes and what does not.
