Velvety Soy Glazed Pork Stir-Fry

Slice the pork tenderloin into thin strips and toss in a bowl with 1 tablespoon of cornstarch and a pinch of salt.

Whisk together the soy sauce, brown sugar, sesame oil, and remaining tablespoon of cornstarch in a small bowl until smooth.

Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat until shimmering.

Add the pork in a single layer and sear for 3 minutes without moving it, then stir-fry for 2 minutes until browned and cooked through.

Remove the pork from the pan and set aside.

Add the sliced bell peppers to the same pan and stir-fry for 3 minutes until slightly softened but still crisp.

Add minced garlic and ginger to the peppers, cooking for 30 seconds until fragrant.

Return the pork to the pan, pour the sauce over everything, and toss for 1 minute until the glaze thickens and coats the ingredients.
