Lemon Herb Chicken and Lentil Pilaf
A hearty pilaf featuring tender chicken, savory lentils, and bright lemon notes.

Season chicken pieces lightly.
Sauté diced Onion and minced Garlic in Olive Oil until translucent.
Add Lentils, Thyme, chicken, and Water.
Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
Stir in basmati rice and continue simmering, covered, until rice and lentils are tender (about 20-25 more minutes).
Squeeze fresh lemon juice over the top before serving.
Season with Salt and Black Pepper.
