Drain the beans but keep 3 tablespoons of the liquid from the tin.

Blend the beans, the juice of the whole lemon, the peeled garlic clove and most of the olive oil until smooth.

Loosen with the reserved bean liquid, a spoonful at a time, until it drops slowly off a spoon.

Season with salt and pepper, then taste. It will almost certainly want more lemon and more salt than feels right.

Spread into a bowl, drag a spoon through the top and pour the remaining oil into the groove.
