Heat the oven to 200C / 180C fan.

Soften the diced onion in oil for 8 minutes, add the garlic for a minute, then the crushed tomatoes. Simmer 15 minutes until thickened, and season well.

Boil the pasta for 3 minutes LESS than the packet says. It should still have a firm, chalky centre.

Toss the drained pasta through the sauce with the torn basil and half the mozzarella.

Tip into a baking dish, top with the remaining mozzarella and all the parmesan.

Bake 20-25 minutes until blistered and bubbling. Rest 10 minutes before serving or it will not hold together on the spoon.
