Ripe Banana Oat Cookies

Heat the oven to 180C / 160C fan and line a tray.

Mash the bananas thoroughly — no lumps, or the cookies fall apart.

Stir in the oats, cinnamon, salt and chocolate chips until evenly combined. The mixture should be sticky and hold its shape on a spoon; add a few more oats if it slumps.

Spoon 12 mounds onto the tray and flatten each one slightly. They do not spread, so shape them how you want them.

Bake 14-16 minutes until the edges are set and lightly golden.

Cool on the tray for 5 minutes before moving — they are fragile while hot.
