Browned Butter Banana Bread

Preheat your oven to 175°C and line a 23cm loaf pan with parchment paper.

Place butter in a small saucepan over medium heat, swirling frequently until it foams, turns golden-brown, and smells nutty, then remove from heat immediately to prevent burning.

Mash the bananas in a large mixing bowl until mostly smooth but still slightly chunky.

Stir the browned butter and brown sugar into the mashed bananas until thoroughly combined.

Whisk in the eggs and vanilla extract until the mixture is uniform.

Fold in the flour, baking soda, and salt using a spatula until just combined; do not overmix or the bread will be tough.

Pour the batter into the prepared loaf pan and smooth the top with your spatula.

Bake for 50 to 55 minutes, or until a skewer inserted into the center comes out clean.

Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
